Cottage Cheese Frittata
Ingredients
- ¼ teaspoon salt
- ½ cup (shredded) cheddar cheese
- ¾ cup (not packed) cottage cheese
- 2 scallions, chopped
- 4 large eggs
Directions
- Preheat oven to 350°F.
- Add eggs, cottage cheese, salt and pepper to a medium mixing bowl and whisk until smooth and combined.
- Add chopped scallions and cheddar cheese to the egg mixture and stir to combine.
- Pour egg mixture into a prepared dish.
- Bake uncovered until set and golden brown around edges, about 40-45 minutes. It’s okay if the middle is still a little jiggly, it will still set as it rests.
- Let the frittata rest at room temperature for 10-15 minutes, then cut into 6 slices and serve.
